Homemade Pumpkin Butter and Scones
Autumn just beckons me to the kitchen. The smells of rich spices, apples, squashes and baking lures me after a hot summer of grilling. I love to make soups and stews and bake.
My kiddos love pumpkin butter. They divy up how much each one gets. So I decided to make my own at less than half the cost. Let me tell you how divine my house smells right now!
Pumpkin Butter
big can of pumpkin puree
3/4 cup applesauce
1/2 cup honey
1 cup sugar
2 t. cinnamon
1 t. nutmeg
1 1/2 t pumpkin spice
1 t. lemon juice
2 T water
Combine everything in a saucepan and bring to a boil. Let simmer for about 30 minutes or until thick.
I made some scones to go with the pumpkin butter. You can use graham crackers or fresh bread or muffins; whatever you like!
