Apple Cider Mini Muffins
2 c flour
1 1/2 t baking powder
1 1/2 t baking soda
1/2 t salt
2 t cinnamon
1 egg
2/3 c brown sugar
1/2 c apple butter
1 t vanilla
1/3 c honey
1/3 c apple cider
1/3 c greek yogurt
2 T canola oil
Topping:
2 T melted butter
1/4 c sugar
1 t cinnamon
Spray 3 mini muffin tins with Pam. Heat oven to 400 degrees. Combine dry ingredients in separate bow. Mix wet ingredients then add in dry. Don't overmix. Fill tins 3/4 full. Bake 10-12 minutes. After muffins have cooled a bit brush tops with melted butter and roll in cinnamon sugar.

Douglas Montgomery Senior Portraits
