Fresh Apple Squares


It's apple picking season and the smell of apple anything cooking in the kitchen is so earthy and autumnal!
I love this recipe, it's a snap to pull together.  Whatever kind of apples you have handy will work fine and you only need 2 of them!


1 3/4 cup sugar
3 eggs
1 cup vege oil
1 t. baking soda
1/4 t. salt
2 cups flour
1 t. cinnamon
2 cups chopped, peeled apples
1 cups chopped nuts--optional


Preheat oven to 350 degrees.  Spray 9x13 pan.
Beat sugar, eggs, and oil.
Combine baking soda, salt, flour and cinnamon in separate bowl (I never do this, I throw it all in the mixer, but I will share the recipe as it is written :).
Add dry mix to egg mix and beat well.
Fold in apples and nuts.
Pour into pan and bake for about 45 minutes or until middle is cooked.
After it cool sprinkle with confectioner's sugar for dusting.
Cut into squares and enjoy.
